Your Brain on Kale
As you know, I am constantly on the outlook for brain healthy foods and nutrient. And in doing so I’ve read some rather impressive information about the value of Kale. Recently Dr. Drew Ramsey Assistant Clinical Professor of Psychiatry at Columbia University in New York, wrote a book titled The 50 Shades of Kale. In a recent review he noted: “I love recommending kale for three fundamental reasons: Kale tops the charts of nutrient density, possesses incredible culinary flexibility, and is easy to grow almost anywhere. My ultimate measure of a food is its power to support brain health, and it is clear that more kale in your diet means a happier, healthier, sexier you — all the basic signs that your brain is running well.” My only problem with Kale is it’s bitter taste! But in his book coauthored by a chef, he promises to show various ways to enhance it’s flavor. In his article he also notes the value of carotenoids, which Harvard University just linked to one’s overall sense of optimism.
